We are urgently seeking an experienced and dedicated Marine Cook / Chief Cook to join the crew of our General Cargo vessel trading on Worldwide routes. As a key member of the shipboard team, you will be responsible for the preparation and service of nutritious, high-quality meals, ensuring the welfare and satisfaction of the officers and crew.

This is an excellent opportunity for a highly skilled maritime culinary professional to secure a long-term position with a reputable shipping agency based in Manila. You will manage the entire galley operation, from menu planning and provision requisition to inventory control and strict adherence to HACCP and sanitation standards.

Your Daily Responsibilities:

  • Planning diverse menus to cater to the nutritional needs and preferences of the international crew.
  • Managing provisions inventory, placing orders, and ensuring proper storage and stock rotation.
  • Preparing, cooking, and serving meals promptly.
  • Maintaining the galley, mess hall, and food storage areas in a spotless, sanitary condition.
  • Adhering strictly to budget constraints and minimizing waste.
  • Ensuring all food handling and preparation meets safety codes.
  • Train and supervise messmen/stewards in food service and galley maintenance tasks.

Required Qualifications:

  • Valid Certificate of Competency (COC) as Chief Cook or Messman.
  • At least 12 months of total sea service in a Cook capacity on overseas vessels.
  • Completed STCW Basic Safety Training, Medical First Aid, Fire Prevention & Fire Fighting, and PSSR.
  • Excellent culinary skills, capable of preparing international (Western & Asian) cuisine.
  • Strong understanding of galley administration, budgeting, and hygiene management.
  • Valid Seaman's Book, Passport, and US Visa (preferred but not required).
  • Physically fit and medically cleared for sea duty via PEME.
  • Strong work ethic, integrity, and the ability to work harmoniously with a multicultural team.

Estimated Salary: PHP 80,000.00 - PHP 120,000.00 per month (Negotiable based on experience and tenure)

Responsibilities

  • Plan and prepare nutritious and varied menus for the ship's complement, considering dietary restrictions and preferences.
  • Manage the galley, including inventory of food supplies, ordering provisions, and ensuring proper storage and rotation.
  • Oversee the cleanliness and sanitation of the galley, mess room, and all related equipment in compliance with HACCP standards.
  • Maintain budgets and minimize provisions waste.
  • Coordinate with the Chief Officer for provisions arrangements in various ports.
  • Prepare special meals for medical diets, religious observances, and celebrations.
  • Train and supervise messmen/stewards in food service and galley maintenance tasks.

Qualifications

  • Valid and existing Certificate of Competency (COC) as Chief Cook or Messman.
  • At least 2 years of sea service experience in a similar capacity on ocean-going vessels.
  • Completed STCW Basic Safety Training, Fire Prevention & Fire Fighting, and Medical First Aid (valid certificates required).
  • Strong culinary skills and experience in quantity cooking for international crews.
  • Excellent knowledge of maritime galley hygiene, HACCP, and safety standards.
  • Good command of the English language, both written and verbal.
  • Valid seaman's book and passport (US Visa is an advantage).
  • Must be physically fit and pass a PEME (Pre-Employment Medical Examination).
