This is a unique opportunity to build a kitchen from the ground up. Responsibilities

  • Lead the pre-opening phase of the kitchen, including kitchen layout optimization and equipment selection.
  • Design, develop, and execute a creative and commercially viable cafe menu featuring breakfast, brunch, and lunch options.
  • Recruit, train, and manage a high-performing kitchen team, fostering a positive and professional work environment.
  • Oversee all food preparation and ensure the highest standards of taste, quality, and plating presentation.
  • Manage food costs, inventory levels, and supplier relationships to maintain target margins.
  • Implement and maintain strict hygiene, sanitation, and safety standards (HACCP) throughout the kitchen.
  • Collaborate with the management team on marketing initiatives, seasonal specials, and event catering.
  • Standardize recipes and production processes to ensure consistency across all shifts.

Qualifications

  • Proven experience as a Head Chef or Senior Sous Chef (minimum 3-5 years) in a reputable cafe or boutique restaurant.
  • Prior experience with new restaurant openings or pre-opening phases is highly preferred.
  • Strong expertise in contemporary cafe cuisine with a focus on fresh, healthy, and locally sourced ingredients.
  • Exceptional leadership skills with the ability to inspire and mentor a diverse team.
  • Proficiency in food costing, waste management, and kitchen administration.
  • Excellent communication skills in English; proficiency in Indonesian is a significant advantage.
  • Ability to thrive in a high-pressure, fast-paced environment while maintaining attention to detail.
